What you need:Â
- Fresh mutton on the bone: 400g
- Onion: 2 large
- Tomato: 2 medium
- The Women of Goem Mutton Velha masala: 3-4 heaped tsps
- Ginger garlic paste: 1 tsp
- Bay leaf: 1
- Cardamom pods: 2
- Cloves: 2
- Star Anise: 2
- Cinnamon stick: 1 inch piece
- Curd: 2-3 tsps
- Salt to taste
- Cooking oil (coconut oil is traditional, but you can use any oil)
- Coriander leaves (cilantro) for garnish

Cut the Mutton into medium pieces. Pat dry.

Finely chop the onions.

Marinate the mutton with half tsp of salt,

Half a tsp of turmeric,

2 tsps of yoghurt or curd

2 tsps of lime juice

Mix throughly.

Add 2 tsp heaps of Mutton Velha masala.

Mix throughly.

Keep aside for at least an hour. Overnight is best.

Heat a vessel and add 2-3 tbsps of cooking oil.

Add all the raw spices.

Add the ginger garlic paste.

Add the onions.

Saute the onions.

Until they turn brownish.

Add 2 tsps of the Mutton Velha masala.

Fry on a low heat for 2-3 minutes.

Add the tomatoes.

Fry on a low heat until the tomatoes become soft.

Add the mutton along with the left over water.

Mix well with the gravy.

Cover and cook for 10 minutes.

Stir occasionally.

Check for the desired consistency of the gravy.

Sprinkle the coriander leaves.

Serve hot with rice or bread.
